Recipe: Durban Curry

Thank you to Mo Dent @cookingmojo for this incredible recipe that works wonderfully both in a potjie (dutch oven) and a normal oven. Cooking Mojo bought their poijie at our weekly Farm Gate Market and the UK lamb from our online butchers.
 

Ingredients

 

Whole spices

1 star anise
1 cinnamon stick
3 whole cardamom pods
1⁄2 teaspoon fennel seeds
1⁄2 teaspoon cumin seeds
2 table spoons of vegetable oil
1 onion, diced
 

Fine spices

3 tablespoons garam masala
1 teaspoon ground coriander
1 teaspoon cayenne pepper
2 teaspoons turmeric
 

The meat

1kg diced Rother Valley Farm British beef or lamb
2 tomatoes, medium, chopped
6 garlic cloves, finely chopped
2 teaspoons ground ginger
6 curry leaves
2 potatoes, large, peeled, diced
cilantro (optional)
 

Directions

  1. Fry all the ingredients listed under "Whole spices" until the onion is glassy.
  2. Add the "Fine spices". Stir and fry for a good 15mins
  3. Add the tomatoes, and stir.
  4. Add the meat, ginger, garlic and curry leaves.
  5. Simmer for half an hour or more, until the meat is almost tender, then add a little water and the potato cubes.
  6. Simmer until meat is tender
  7. Add salt to taste and enjoy!
